I’m super excited to announce that as of today, enrollment is officially open for the second cohort of 80/20 Cooking!
What is 80/20 Cooking? It’s a four week boot camp where you’ll learn how to cook without recipes.
If you want to learn how to make a specific dish, there are plenty of resources online that will show you how to do that with step-by-step instructions. But if you want to learn how to cook— meaning to really learn the foundational skills and techniques that transcend individual recipes— there are surprisingly few resources. 80/20 Cooking is designed to teach just that.
You’ll walk away from this course confident in the kitchen, with the skills and knowledge to cook from a place of intuition and enjoyment. You’ll learn the fundamentals— key techniques, practical skills, how to build and balance flavor— but you’ll also leave with a repertoire of new dishes that you’ve mastered. The dishes I teach in this course are highly customizable, technique-driven, and cover the range from from weeknight staples to fancy group meals.
I’ve long believed that the real inflection point in any person’s cooking journey is when they graduate from following recipes to having the skills and confidence to cook from a place of intuition. This opens up a whole new world where cooking becomes easier, more creative, and more enjoyable. I know personally how much learning to cook this way has brought to my life— I eat healthier, I save money on food, my social life has improved, and I’ve taken on a new creative hobby that fits into my daily life.
Cooking can seem intimidating and overwhelming. But it doesn’t have to be. This course makes it simple. I’ll break down for you exactly what cookware and equipment you really need, teach you how to stock a pantry for success, demonstrate foundational skills and techniques, and show you how to put them all together to build a regular practice of home cooking that consistently produces delicious results.
I very deliberately didn’t make this a simple self-paced video course. This course is structured in a way that really produces results:
There’s a start date and and end date— show up, complete the work, and you’ll achieve real results in just four weeks.
There’s a clear curriculum to follow with assignments, built-in incentives, and accountability.
You’ll go through the course with a community of fellow students— connect with fellow home cooks, share your progress, and learn from one another.
This course consists of active, high-touch learning. You’ll have direct access to me for feedback, questions, troubleshooting, and guidance throughout the process.
The last cohort sold out, and I’m intentionally keeping the group size small in order to create an intimate learning environment. I’ve included some more details below, but the 80/20 Cooking website has everything you need, and I’m happy to directly answer any questions you might have!
What’s Included?
4 Live Learning Sessions
The core curriculum is what I’m calling “The System.” It consists of four modules covering things like kitchen setup, seasoning, primary flavors and their interactions, heat, techniques, how to freestyle in the kitchen, and more. This is where you’ll learn how to think like a chef. Each week I’ll teach a live class covering that week’s topic.
4 Live Cooking Demos
Every week I’ll demo the week’s recipe assignment live and do a live Q&A.
Weekly Assignments
There will be a weekly recipe assignment (with incentives for you to complete each assignment on a weekly basis). This will allow you to put into practice some of the skills and techniques learned, and in doing so you’ll be able to add impressive new dishes to your repertoire.
Student Library
You’ll get access to a student library of documents and resources to help you on your cooking journey. This includes a full library of every recipe, guide, and technique breakdown I’ve ever published (and is updated continuously).
It also includes a self-paced video library covering foundational skills like kitchen setup, mise en place, knife skills, pantry staples, and cookware basics.
Guest Lectures
I’ve put together an awesome series of guest lectures for students. These will be live conversations / Q&As with subject matter experts covering topics like cooking with seafood, selecting meat cuts and cooking them, nutrition and cooking, and more.

The Logistics
Dates: October 2nd - 27th, 2023
Time Commitment: Expect to spend ~3 hours per week on the course material. This includes classes, learning materials, and recipe assignments.
Live Sessions: Live sessions are held Mondays (Learning Sessions) and Wednesdays (Recipe Demos) at 7pm EST. All of these sessions will be recorded and shared so that you can view them on your own time.
A note on attendance: I'd love to have you join the live sessions, but attendance is optional. The live sessions provide us a fun space to learn in a dynamic environment and allow students the opportunity to ask questions live, but you're also welcome to review these sessions at your own pace. Everyone in the course will be added to a Circle community platform, so you'll be able to ask questions and get feedback there throughout the entirety of the course!
My one suggestion is that you schedule 1.5-2 hours per week on any given day to practice the recipe assignments. If you do this and review the learning material, I know you'll get a ton out of this course!
